Ingredients (9)

3.00 quinces
125.00 ml sugar
3.00 cinnamon — stick
1.00 vanilla — pod, split, seeds scraped
4.00 orange — juice only
8.00 fresh ginger — shavings
375.00 ml water
5.00 ml butter — cut into small pieces

Method:

Peel and quarter quinces, reserving 12-14 pips and 4-5 pieces of peel. Place quinces in a shallow pan, sprinkle with sugar and arrange cinnamon sticks in between, together with pips and skin.
Mix vanilla bean scrapings with orange juice and pour over quinces.
Tuck ginger shavings in between slices, add water and butter and cover with lightweight foil.
Bake at 160 ºC for about 1 1/2 hours, or until quinces are pink. Discard quince peel and pips. Chill.
Just before serving, segment oranges, removing pith, and add to quinces. Serve with Bulgarian yoghurt mixed with cream.
