Quince tartlets with local blue

    flour

    pinch of salt
  • 100
    ml
    butter
  • 50
    ml
    castor sugar
  • 1
    egg yolk
  • 30
    ml
    iced water
  • 250
    ml
    quince jam
  • 0
    Local blue cheese to serve, wegde
 

Method

 
Preheat oven to 180°. Place flour, salt, butter and castor sugar into a food processor; pulse until combined. Ass egg and water. Pulse to combine. Wrap in cling wrap and chill for 30 minutes. Place dough on a floured surface and roll out thinly. Using a cookie cutter. Cut out rounds and press into a greased patty pan tray. Place a teaspoon of jam into each one and bake for 10 to 15 minutes until pastry is golden and jam is bubbling.
Serve with a local dessert wine and a wedge of local blue cheese.
