Ingredients (8)

250.00 ml flour
0.00 0 salt — just a pinch
100.00 ml butter
50.00 ml castor sugar
1.00 eggs — yolk only
30.00 ml water — iced
250.00 ml jam — quince
0.00 0 blue cheese — local, to serve, wedge

Method:

Preheat oven to 180&deg. Place flour, salt, butter and castor sugar into a food processor; pulse until combined.
Ass egg and water. Pulse to combine. Wrap in cling wrap and chill for 30 minutes. Place dough on a floured surface and roll out thinly. Using a cookie cutter. Cut out rounds and press into a greased patty pan tray. Place a teaspoon of jam into each one and bake for 10 to 15 minutes until pastry is golden and jam is bubbling.
Serve with a local dessert wine and a wedge of local blue cheese.
