Quince pebble tart

    ml
    quinces, diced
  • 125
    ml
    sultanas
  • 250
    ml
    apple, diced
  • 500
    ml
    brown sugar
  • 1
    stick cinnamon
  • 500
    ml
    water (approximately)
  • TART BASE
  • 60
    ml
    butter
  • 250
    ml
    cake flour
  • 125
    ml
    wholewheat flour
  • 15
    ml
    oil (you may need more)
  • 125
    ml
    sugar
  • pinch salt
 

Method

 
1. Simmer the first six ingredients gently, adding more water if necessary, until the quinces are soft. Remove the cinnamon stick and mash the quince and apple mixture. Set aside and allow to cool slightly. 2. TART BASE: Rub the butter into the flours, then add the oil, sugar and salt. (A little more oil can be added if necessary for a good consistency). 3. Press two thirds of the dough into a greased springform pan. 4. Spoon in the mashed quince and apple mixture, then coarsely grate the rest of the dough over the top. 5. Bake at 180 ºC for 40 minutes or until the dough is cooked and light brown. Serve hot with whipped cream.
