Quick vegetable soup

  • 1
    large onion, finely chopped
  • 2
    cloves garlic, crushed
  • oil
  • 450
    g
    carrots, scraped and cut into pieces
  • 125
    ml
    red lentils, rinsed
  • 5
    ml
    fresh mixed herbs, chopped
  • 850
    ml
    vegetable stock, prepared with vegetable stock powder
  • 5
    ml
    Marmite (yeast extract)
  • salt and freshly ground black pepper
 

Method

 
Fry the onion and garlic in oil until soft and translucent. Add the carrots, lentils, herbs and stock. Bring to the boil and simmer for about 30 minutes or until the carrots are tender. Stir in the Marmite and season with salt and black pepper to taste. Mash the vegetables with a potato masher and add about 375 ml (1 1/2 cups) boiling water for a thinner soup. Sprinkle with chopped parsley.
