Ingredients (9)

1.00 onion — finely chopped
2.00 garlic — cloves, crushed
oil
450.00 g carrots — scraped and cut into pieces
125.00 ml lentils — red, rinsed
5.00 ml fresh mixed herbs — chopped
850.00 ml stock powder — vegetable
5.00 ml marmite
sea salt and freshly ground black pepper

Method:

Fry the onion and garlic in oil until soft and translucent. Add the carrots, lentils, herbs and stock.
Bring to the boil and simmer for about 30 minutes or until the carrots are tender. Stir in the Marmite and season with salt and black pepper to taste.
Mash the vegetables with a potato masher and add about 375 ml (1 1/2 cups) boiling water for a thinner soup.
Sprinkle with chopped parsley.
