Ingredients (16)

30.00 ml oil
2.00 garlic — cloves, crushed
3.00 onion — finely chopped
1.00 leeks — chopped
250.00 g bacon — diced
3.00 carrots — scraped, chopped
2.00 turnip — peeled and diced
4.00 potatoes — peeled and diced
200.00 g cabbage — shredded
250.00 g green beans
200.00 g broccoli — broken into florets
2.00 Litres stock — chicken
30.00 ml tomato paste
sea salt and freshly ground black pepper
nutmeg — ground
50.00 ml fresh parsley — finely chopped

Method:

Heat the oil in a large saucepan and sauté the garlic, onion and leeks until soft. Add the bacon and fry until done but not browned. Add to the remaining vegetables and lightly stir-fry. Add the chicken stock and bring to the boil before reducing the heat. Simmer for about 20 minutes or until the vegetables are done. Season with salt and pepper if necessary and add a pinch of nutmeg to taste. Sprinkle with chopped parsley and serve.
