Quick vegetable soup

    oil

    cloves garlic, crushed

    onions, finely chopped

    leek, chopped

    bacon, diced
  • 3
    carrots, scraped and chopped
  • 2
    turnips, peeled and diced
  • 4
    potatoes, peeled and diced
  • 200

    cabbage, shredded (optional)
  • 250

    cut green beans
  • 200
    g
    broccoli, broken into florets
  • 2
    Litres
    chicken stock
  • 30
    ml
    tomato paste
  • salt and freshly ground black pepper
  • nutmeg
  • 50
    ml
    parsley, finely chopped
 

Method

 
Heat the oil in a large saucepan and sauté the garlic, onion and leeks until soft. Add the bacon and fry until done but not browned. Add to the remaining vegetables and lightly stir-fry. Add the chicken stock and bring to the boil before reducing the heat. Simmer for about 20 minutes or until the vegetables are done. Season with salt and pepper if necessary and add a pinch of nutmeg to taste. Sprinkle with chopped parsley and serve. Serves 8.
