Quick vegetable lasagne

    kg
    packet of cut, mixed vegetables
  • 6
    lasagne sheets, cooked and drained
  • 8
    tomatoes, sliced
  • 150
    g
    mozzarella cheese, grated
  • 100
    g
    Parmesan cheese, grated
  • 2
    Tbs
    vegetable oil
  • Seasoning
 

Method

Preheat oven to 180 ºC.
Toss the vegetables in oil and season well.
Roast the vegetables for 30 minutes until cooked through.
Line base of an 18 x 28 cm baking dish with half the vegetables.
Layer half the lasagne sheets, half the tomatoes and the remaining vegetables on top.
Cover with remaining lasagne sheets.
Sprinkle grated mozzarella and Parmesan cheese on top and arrange remaining sliced tomatoes over.
Garnish with rosemary and season with coarse black pepper.
Bake for 15 minutes, or until heated through and cheese has melted.
