Ingredients (16)

250.00 g pasta — spaghetti
25.00 ml oil
1.00 onion — large, sliced
1.00 garlic — cloves, finely chopped
125.00 g mushrooms — sliced
500.00 g courgettes — sliced
200.00 g tuna — tinned in brine
70.00 g tomato paste
2.00 ml dried oregano
2.00 ml dried basil
salt
freshly ground black pepper
100.00 g cheddar cheese — grated
250.00 ml milk
3.00 eggs — extra-large
15.00 ml flour — cake

Method:

Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish with margarine.
Cook the spaghetti in boiling salted water until just soft. Drain.
Heat the oil in a large pan and sauté onion and garlic until soft. Add the mushrooms and courgettes and sauté until soft and cooked.
Drain the tuna, reserving the liquid. Flake fish and add to the vegetable mixture along with the tomato paste and tuna liquid.
Season with origanum, basil, salt and pepper to taste.
Reduce heat and simmer for about 5 minutes.
Layer spaghetti, cheese and vegetable mixture in the dish.
Beat the milk, eggs and cake flour together and season with salt and pepper.
Pour over the ingredients in the dish.
Bake for about 20 minutes or until the egg mixture has set and the dish is lightly browned.
