Quick quiche

    rindless bacon, chopped
  • 1
    onion, chopped
  • 250

    fresh button mushrooms, sliced
  • 15

    butter
  • 10
    ml
    mixed herbs or fresh herbs, chopped
  • freshly ground black pepper to taste
  • 200
    g
    Cheddar cheese, grated
  • 2
    eggs
  • 250
    ml
    milk
  • 30
    g
    self-raising flour
 

Method

+/- 30 min
 
Preheat the oven to 180 ºC (350 ºF). Grease an 18 x 28 cm ovenproof dish. Fry the bacon in a pan till done but not crisp. Add the onion, mushrooms and butter and sauté till the onions are soft. Add the herbs and pepper to taste and turn the mixture into the prepared dish, spreading evenly. Sprinkle with the grated cheese. Beat the eggs, milk and self-raising flour together and pour over the mixture in the bowl. Bake for about 30 minutes or till done and set. Serves 4-6.
