Quick pork sausage dish

    pork sausages
  • oil for frying

    large onion, chopped
  • 1
    stalk celery chopped
  • 800

    whole tomatoes in tomato juice, chopped
  • 500
    ml
    tomato juice, chicken stock or a mixture of both
  • 15
    ml
    maple syrup (or more if desired)
  • 10
    ml
    ground cumin (jeera)
  • 10
    ml
    fresh sage, chopped
  • 2
    ml
    freshly ground black pepper
  • 400
    g
    red kidney beans, rinsed
  • handful chopped fresh parsley
 

Method

 
In a heavy-based saucepan, brown the pork sausages in a little heated oil and remove from the pan. Sauté the onion and celery in the pan fat until tender. Add the tomatoes, tomato juice and/or stock and maple syrup, and season with cumin, sage and black pepper. Heat until the mixture begins to simmer, reduce the heat slightly and simmer over medium heat for 20 to 30 minutes until the sauce thickens and has been reduced by half. Add the kidney beans, season if necessary and heat through. Sprinkle with parsley and serve with fresh bread for mopping up the juices.
