    olive oil

    clove garlic, chopped

    dried origanum
  • 4
    ripe tomatoes, thinly sliced

    Cheddar cheese, grated
  • GARNISH
  • black olives and anchovy fillets
 

Method

 
Preheat oven to 200 ºC. Sift flour, baking powder and salt in a bowl. Rub in the margarine until the mixture resembles breadcrumbs. Add mixture of milk and egg and mix lightly with a knife to form a soft dough. Press dough into a greased baking tray or two 200 mm pie plates. Cover with a mixture of tomato, olive oil, garlic and origanum. Arrange tomato slices on top and sprinkle with grated cheese. Garnish with olives and anchovy fillets and bake for 20 minutes. Serves 4-6.
