Quick 'n easy cottage cheese tart

    ml
    non-dairy cream such as Orley Whip, chilled
  • 397
    g
    Nestlé condensed milk
  • 250
    g
    smooth cottage cheese
  • 10
    g
    gelatine
  • 125
    ml
    boiling water
  • 200
    g
    Tennis biscuits, crushed
  • 125
    ml
    butter, melted
  • 410
    g
    mixed berries
  • 5
    ml
    cornflour
 

Method

 
Beat the cream until stiff. Stir the condensed milk and cottage cheese together until just blended and fold in the cream. Dissolve the gelatine in the boiling water. Cool slightly before stirring into the cottage cheese mixture. Mix the biscuits with the butter. Press into the base of a 20 x 30 cm pie dish. Turn the cottage cheese mixture into the dish and chill until set. Drain the berries and thicken the juice with a little cornflour to make a sauce. Serve the tart sliced into squares with a scoop of berries and sauce. Makes 1 large tart.
