Ingredients (9)

250.00 ml non-dairy cream
397.00 g condensed milk
250.00 g cottage cheese — smooth
10.00 g Sheridans gelatine
125.00 ml water — boiled
200.00 g tennis biscuits — crushed
125.00 ml butter — melted
410.00 g mixed berries
5.00 ml cornflour

Method:

Beat the cream until stiff. Stir the condensed milk and cottage cheese together until just blended and fold in the cream. Dissolve the gelatine in the boiling water. Cool slightly before stirring into the cottage cheese mixture. Mix the biscuits with the butter. Press into the base of a
20 x 30 cm pie dish. Turn the cottage cheese mixture into the dish and chill until set. Drain the berries and thicken the juice with a little cornflour to make a sauce. Serve the tart sliced into squares with a scoop of berries and sauce.
Makes 1 large tart.
