Quick 'n crunchy stir fry

  • half an English cucumber
  • 2
    cloves garlic, crushed
  • 5
    grated fresh ginger
  • oil
  • 3
    chives, cut into strips
  • 250
    broccoli, broken into florets
  • 125
    courgettes, washed and sliced into rings
  • 125
    mangetout (optional)
  • salt and black pepper to taste
  • rind and juice of half a lemon

Slice the English cucumber thinly and set aside. Sauté the garlic and ginger in a little oil until soft. Add the remaining vegetables and stir-fry for 5-7 minutes or until soft but still crisp. Add the cucumber and stir-fry for an other minute. Season with salt, pepper, lemon rind and juice. Serve immediately. Serves 4.
