    frozen puff pastry, defrosted

    milk

    ml
    sugar
  • 15
    ml
    butter
  • 1
    cinnamon stick
  • 90
    ml
    cake flour
  • 2
    eggs, beaten
  • ground cinnamon
 

Method

 
Preheat oven to 190 ºC. Roll out enough pastry to line a greased, deep 220 mm pie dish. FILLING: Boil milk, sugar, butter and cinnamon. Blend flour to paste with a little cold water. Add a little hot milk mixture, stirring, then return to rest of milk. Cook for five minutes stirring constantly. Add a little hot milk mixture to eggs, then return the mixture to a pan and cook until thickened, stirring. Remove from the stove and cool. Pour into pastry-lined pie dish and bake for 20 to 25 minutes, or until filling has set. Sprinkle with ground cinnamon and allow to cool.
