Quick macaroni bake

    ml
    soft breadcrumbs
  • 4
    extra-;large eggs, separated
  • 250
    ml
    milk or thin cream
  • 375
    ml
    grated Cheddar cheese
  • 30
    ml
    chopped fresh parsley
  • 375
    ml
    cooked macaroni
  • salt and freshly ground black pepper
  • 2
    large ripe tomatoes, sliced
 

Method

 
Preheat the oven to 180 °C and spray a medium-sized ovenproof dish with non-stick spray. Mix the breadcrumbs and egg yolks together and add the milk or cream, three quarters of the cheese, parsley and the cooked macaroni. Season generously with salt and pepper. Using a clean, dry beater, whisk the egg whites until soft peaks are formed and fold into the mixture. Spoon into the prepared oven dish and arrange the tomato slices on top. Sprinkle with the remaining cheese and bake for 25 to 30 minutes until set and golden brown on top. Serve hot with a homemade tomato sauce and fried sausages if desired.
