  • 375
    ml
    boiling water
  • 300
    g
    sugar
  • 50
    g
    cocoa
  • 125
    g
    sponge fingers
  • 160
    g
    coconut
 

Method

 
Place the boiling water, sugar and cocoa in a saucepan and heat slowly until the mixture comes to the boil. Stir frequently to dissolve the sugar before the mixture comes to the boil. Boil for 5 minutes. Cool slightly. Soak the sponge fingers in the syrup long enough for them to absorb the syrup. Roll the biscuits in coconut. Makes 24 lamingtons.
