Quick jambalaya

    oil

    chicken breast fillets, cubed
  • 1
    green pepper, cubed
  • 5
    ml
    paprika
  • 150
    g
    chorizo sausage, sliced
  • 350
    g
    rice
  • 750
    ml
    chicken stock
  • 410
    g
    can Mexican flavoured tomatoes
  • 45
    ml
    chives, freshly chopped
 

Method

Heat the oil in an large saucepan.
Brown the chicken and remove from the pan.
Add the green pepper, paprika and chorizo sausage and cook for about four minutes, until golden.
Add the rice and cook, stirring, for two minutes.
Pour in the chicken stock and tomatoes.
Bring to the boil and simmer gently, stirring occasionally, for 15 minutes or until the liquid has been absorbed and the rice is tender.
Add the chicken, season to taste and heat through.
Stir in the chives and serve hot.
