Quick fruit zabaglione

    jumbo egg yolks
  • 75
    g
    castor sugar
  • 2
    ml
    ground cinnamon
  • 5
    ml
    vanilla essence
  • 150
    ml
    sherry
  • 125
    g
    strawberries, halved
  • cinnamon sugar to serve (see tips)
 

Method

 
Place egg yolks, castor sugar, cinnamon and vanilla essence in a heatproof bowl. Whisk until pale, thick and creamy. Place bowl over a saucepan of simmering water and continue to whisk, gradually adding sherry, until mixture is frothy and thickened. Dip dampened rims of chilled serving bowls into cinnamon sugar. Divide strawberries between bowls, pour egg mixture over and serve immediately.
