Quick coffee truffles

  • 500
    g
    icing sugar, sifted
  • 250
    g
    margarine, at room temperature
  • 12
    ml
    instant Nescafé coffee granules
  • 5
    ml
    hot water
  • 2
    extra-large egg yolks
  • 100
    g
    chocolate vermicelli
 

Method

 
Cream the icing sugar and margarine together. Dissolve the coffee granules in the hot water. Add the egg yolks, beating until well blended. Place the mixture in the fridge to harden. When hard enough to work with, roll into balls and then in the chocolate vermicelli. Makes about 50 truffles.
