Quick chicken tikka

    tikka paste
  • 250
    ml
    low fat yoghurt
  • 0.50
    lemon (the juice)
  • 400

    chicken breast fillets
  • CUCUMBER MARINADE
  • 1
    medium English cucumber
  • 65
    ml
    water
  • 30
    ml
    sugar
  • 30
    ml
    white vinegar (or more to taste)
  • 1
    fresh chopped chilli (use 2 if desired)
  • salt and pepper
 

Method

 
Make the marinade - combine tikka paste, yoghurt and lemon juice in a bowl.
Toss chicken into marinade and stir to coat thoroughly.
Marinate for 30 to 60 minutes - the longer the better.
Preheat grill. Place chicken on a baking tray and grill for 8 to 10 minutes, turning once and basting with marinade once or twice.
If you like, you could heat the remaining marinade, very slowly, and serve it on the side.
Slice chicken and serve on a bed of marinated cucumber ribbons with basmati rice on the side.
To make marinated cucumber, slice cucumber with a potato peeler into long strips. Mix all the marinated cucumber ingrededients together and marinate cucumber ribbons in the mixture for at least 30 minutes before serving.
