Quick beef stroganoff

    boneless beef, sliced into thin strips
  • salt and freshly ground black pepper
  • 1
    onion, finely chopped
  • 250
    g
    fresh button mushrooms, halved
  • 410
    g
    mushroom soup
  • 250
    ml
    sour cream
  • 1
    lemon, grated rind and juice
 

Method

 
Season the meat strips with salt and pepper and brown in a little oil. Remove from the pan and set aside. Sauté the onion in the pan fat until tender and add the mushrooms. Stir-fry until lightly browned. Return the meat to the pan and add the mushroom soup and sour cream. Simmer until the sauce has thickened. Season with salt and pepper to taste and with the lemon rind and juice. Serve with pasta. Serves 4-6.
