Quick banana pudding

    melted butter

    extra-large egg, beaten
  • 250

    cake flour

    bicarbonate of soda
  • 5
    ml
    baking powder
  • pinch salt
  • 60
    ml
    water
  • 5
    ripe bananas, mashed
  • SYRUP
  • 200
    ml
    sugar
  • 45
    ml
    butter
  • 250
    ml
    water
 

Method

 
Preheat the oven to 180 °C and grease a 24 cm round ovenproof dish with butter.
Stir in the sugar, butter and egg together.
Sift the dry ingredients together and add to the sugar mixture.
Mix in the water and bananas and bake for 45 to 50 minutes or until done.
Meanwhile bring all the syrup ingredients to the boil.
Simmer for 1 minute and pour over the pudding when it comes out of the oven.
