Quick apricot sundae

    loaf sponge cake, diced

    can apricot slices, drained (reserve syrup)
  • 250
    ml
    (1 cup) vanilla ice cream, slightly softened
  • 125
    ml
    (1/2 cup) whipped cream sweetened with
  • 65
    ml
    (1/4 cup) castor sugar

1. In a glass, layer sponge cake pieces (drizzled with reserved apricot syrup), apricot slices, ice cream and whipped cream. Repeat layers, ending with whipped cream. Top with a cherry.
