    cup
    basil pesto
  • 1
    tub PnP cream cheese
  • 3
    Tbs
    pine nuts - toasted
  • 2
    smoked mackerel (fillets)
  • 1/2
    cup
    cre`me frai^che
  • 1/2
    medium lemon - juiced and zested
  • 1
    country loaf
  • 4
    medium garlic cloves
  • 1
    cup
    calamata olives
  • 1/2
    cup
    PnP feta cheese - diced
  • 4
    cup
    vegetables - radishes, baby fennel and baby cucumbers
  • 1
    glug PnP Finest extra-virgin olive oil
  • 1
    pinch
    salt and milled pepper
 

Method

Spoon cream cheese into serving bowl or glass and top with pesto, a drizzle of olive oil and a smattering of pine nuts.

Skin mackerel and mash with a fork, fold through crème fraîche, lemon juice and zest.

Brush bread slices with olive oil. Char-grill and rub with garlic.

Wash and trim baby vegetables

Arrange all ingredients on a platter and serve.
