Quick and easy honey mustard chicken

Ingredients

  • 2
    chicken breasts on the bone - skin removed
  • 1
    small onion - sliced thickly
  • 250
    ml
    fresh orange juice
  • 1
    knob ginger - grated
  • 2
    Tbs
    old brown sherry
  • 1
    Tbs
    honey
  • 1
    tsp
    wholegrain mustard
  • 1
    Tbs
    raisins or sultanas (optional)
  • 1
    Tbs
    cornflour
  • Seasoning to taste
 

Method

Heat your oven to 180°.

Place the breasts and the onion slices in an ovenproof dish that has a lid.

Whisk together the remaining ingredients adding the cornflour last, and pour over the chicken.

Bake for 30 minutes, remove the lid and bake for another 15 minutes to colour.

If the sauce is too thick add a little more juice.
