Quick Curried Chicken

    Greek-Style Yoghurt
  • 3
    Garlic Cloves (crushed)
  • 1
    Knob of Ginger (grated)
  • 1
    Red Chilli (mild,seeded and chopped)
  • 1
    tsp
    Ground Cumin
  • 1
    tsp
    Turmeric
  • 0.50
    tsp
    Paprika (hot)
  • 2
    Tbs
    Olive Oil
  • 1
    Lemon Juice
 

Method

 

Mix together 1 cup Greek-style yoghurt, 3 crushed garlic cloves, a grated knob of ginger, 1 large mild red chilli, seeded and chopped (optional), 1 tsp ground cumin, 1 tsp turmeric, ½ tsp hot paprika, 2 tbsp olive oil, the juice of 1 lemon and plenty of sea salt flakes and freshly ground black pepper.

Pour over 4 chicken breast fillets and leave to marinate for 30 minutes.

Bake at 180 degrees C for 25 minutes and serve on basmati rice with peas, baby spinach leaves and some torn mint leaves.

Make double and fill Portuguese rolls with the cold chicken and some crunchy lettuce for lunch the following day.
