Ingredients (12)

PUTU PAP
500.00 ml water — boiled
salt
180.00 g maize meal
beef mince
1.00 onion — sliced
oil
500.00 g beef mince
2.00 tomatoes — peeled and chopped
250.00 ml stock — chicken
65.00 g tomato paste
sugar
salt and freshly ground black pepper

Method:

Pour the boiling water into a saucepan. Add about 2 ml salt. Add all the mealie meal at once so that it lies in a heap in the centre of the saucepan. Do not stir. Cover and heat slowly for about 10-15 minutes or until a thin layer has formed over the mealie meal. Stir the mixture with a fork until it is loose and crumbly. Cover and heat for about 15-30 minutes more until the pap is dry and crumbly. Stir once more to break up.
TO MAKE MINCE
Sauté the onion in a little oil until soft. Add small quantities of the mince at a time and fry until brown. Stir with a fork. Add the tomatoes. Blend the chicken stock with the tomato paste (or 75 ml tomato purée) and add to the mince mixture. Reduce the heat and simmer until the tomatoes have formed a purée and the mince has formed a generous gravy. Season with a little sugar, salt and pepper.
Serve the mince with the putu. Serves 4.
