Ingredients (6)

500.00 ml flour — cake or all-purpose
2.00 ml salt
175.00 ml butter — melted or ghee
100.00 ml milk — warm
100.00 ml water
500.00 ml sunflower oil

Method:

Sift flour and salt. Rub butter or ghee into flour until crumbly.
Combine milk and water, add to flour mixture and mix to a soft dough.
Moisten hands with a little oil and knead dough until smooth and elastic. Break off small pieces of dough the size of table tennis balls and roll out into 7 cm diameter rounds on a lightly floured surface.
Heat oil until fairly hot and deep fry puris, 2-3 at a time, until puffed up and golden brown on both sides, about 1 minute.
Press puris into oil with a slotted spoon to ensure they’ll puff up. Remove from oil and drain on paper towel.
Serve hot or cold.
