Purée of white butter beans and artichokes

    olive oil

    garlic cloves, crushed
  • 850

    cans butter beans, drained and liquid reserved
  • 200
    g
    canned artichokes, drained
  • salt and freshly ground black pepper
  • 30
    ml
    chopped parsley, to serve
 

Method

 
Purée oil, garlic beans, reserved liquid and artichokes in a food processor and season to taste. Sprinkle with chopped parsley. Serve with toasted garlic bread and a drizzle of olive oil. Serves 4.
