Ingredients (8)

1.00 onion — large, chopped
30.00 ml butter
750.00 g pumpkin — peeled, diced
250.00 g potatoes — peeled,diced
500.00 ml stock — chicken
150.00 ml milk
150.00 ml cream
sea salt and freshly ground black pepper to taste

Method:

Sauté the onion in the butter until soft. Add the diced pumpkin and potato and stir-fry for about 1 minute. Add the chicken stock and simmer until the pumpkin and potato are completely soft. Purée and stir in the milk and cream. Season to taste with salt and cayenne pepper and heat until warmed through.
Serves 4.
