Ingredients (8)

FILLING
500.00 ml pumpkin — steamed, mashed
4.00 eggs — extra-large
125.00 ml cream — fresh
125.00 ml brown sugar — soft
5.00 ml ginger — ground
5.00 ml cinnamon — ground
10.00 ml mixed spice — ground
salt — just a pinch

Method:

1. Preheat oven to 190 ºC.
2. Line pie plate with pastry, prick bottom well with a fork, decorate edges and chill.
3. Mix steamed pumpkin purée with the rest of the ingredients in a mixing bowl and stir until well blended. Pour this mixture into the pastry case and bake for 1 hour, or until pastry has browned and filling has set. Allow pie to cool before serving.
