    quantity pâte brisée (see recipe)
  • FILLING
  • 500
    ml
    steamed pumpkin, mashed
  • 4
    extra-large eggs
  • 125
    ml
    fresh cream
  • 125
    ml
    soft brown sugar
  • 5
    ml
    ground ginger
  • 5
    ml
    ground cinnamon
  • 10
    ml
    mixed spice
  • pinch of salt
 

Method

 
1. Preheat oven to 190 ºC. 2. Line pie plate with pastry, prick bottom well with a fork, decorate edges and chill. 3. Mix steamed pumpkin purée with the rest of the ingredients in a mixing bowl and stir until well blended. Pour this mixture into the pastry case and bake for 1 hour, or until pastry has browned and filling has set. Allow pie to cool before serving.
