    prepared shortcrust pastry case
  • 400
    g
    trimmed pumpkin, cubed and cooked
  • 100
    ml
    milk
  • 125
    ml
    cream
  • 175
    g
    soft brown sugar
  • 3
    large eggs, lightly beaten
  • 2
    ml
    each ground cinnamon, ginger and nutmeg
 

Method

1 hour 10 minutes
 
Drain cooked pumpkin well. Mash and mix in remaining Ingredients. Pour into the pastry case and bake in preheated 200 ºC oven for one hour, 10 minutes, or until filling is set.
