Pumpkin nd feta tart

    sheets (about half a pack) phyllo pastry
  • olive oil or non-stick olive oil spray
  • 500

    cooked pumpkin cubes
  • 250
    g
    feta cheese, crumbled
  • 6
    whole chives, chopped
  • 75
    ml
    butter, melted
  • 10
    ml
    curry powder
  • 45
    ml
    fruit chutney
  • 10
    ml
    dried tarragon
  • 2
    eggs, lightly whisked
  • salt
 

Method

40 minutes
 
Preheat oven to 190 °C and grease a 23 cm pie dish with non-stick spray.
Brush the phyllo pastry sheets with olive oil or spray with non-stick olive oil spray and arrange them in the pie dish.
Mix the remaining ingredients, spoon into the crust and bake for about 40 minutes or until the filling has set.
Serve on the side at a braai or with a salad for a light meal.
