Pumpkin curry

    oil
  • 2
    onions, finely chopped
  • 1
    piece fresh ginger, grated
  • 2
    cloves garlic, crushed
  • 5
    ml
    fennel seeds
  • 3
    fresh red chillies, chopped
  • 1
    kg
    pumpkin, skinned and cubed
  • 5
    ml
    mustard seeds
  • 10
    ml
    turmeric
  • 250
    ml
    coconut milk
  • 500
    ml
    water
  • fresh coriander, to garnish
 

Method

25 mins
 
Heat oil and cook onions, ginger, garlic, fennel seeds and chillies until onion is soft. Add pumpkin, mustard seeds and turmeric. Fry for two minutes. Lower heat and add coconut milk and water. Cook for 15 minutes until pumpkin is tender. Season. Garnish with coriander leaves.
