Pumpkin and prune muffins

    soft brown sugar

    cooked pumpkin, mashed

    ml
    chopped prunes
  • 1
    egg, lightly beaten
  • 125
    g
    butter, melted
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Spray a muffin pan with non-stick spray. Mix the wholewheat flour, baking powder, spices, salt, oats and brown sugar in a large mixing bowl. Add the pumpkin, prunes, egg and butter and stir until just mixed. Fill the muffin hollows two thirds of the way and bake for 25 to 30 minutes or until a skewer inserted comes out clean. Let the muffins cool, then turn onto a wire rack to cool completely. Serve warm or cold.
