Pumpkin and prune muffins

    soft brown sugar

    cooked pumpkin, mashed

    chopped prunes

    egg, lightly beaten

    butter, melted
 

Method

25-30 min
 
Preheat the oven to 180 ºC (350 ºF). Spray a muffin pan with non-stick spray. Mix the wholewheat flour, baking powder, spices, salt, oats and brown sugar in a large mixing bowl. Add the pumpkin, prunes, egg and butter and stir until just mixed. Fill the muffin hollows two-thirds full and bake for 25-30 minutes or until cooked. Let the muffins cool, then turn onto a wire rack to cool completely. Serve warm or cold. Makes 10 large or 12 small muffins.
