Pumpkin and banana fritters

    mashed cooked pumpkin
  • 125
    ml
    mashed ripe bananas
  • 2
    eggs
  • 250
    ml
    cake flour
  • 7
    ml
    baking powder
  • 15
    ml
    sugar
  • pinch salt
  • 5
    ml
    lemon juice
  • 1
    ml
    ground cinnamon
  • sunflower oil for frying
  • ground cinnamon mixed with brown sugar
  • lemon wedges
 

Method

 
Beat pumpkin, banana and eggs together well. Stir in flour, baking powder, sugar, salt, lemon juice and ground cinnamon and mix. Pour oil into a frying pan (about 4 cm deep), heat. Drop spoonfuls of batter, a few at a time, into hot oil and fry until bubbles form on surface. Turn fritters and fry on other side until golden. Remove from oil, then drain on absorbent paper. Keep warm while making remaining fritters. Sprinkle fritters with cinnamon and sugar mixture. Serve fritters with lemon wedges.
