Pumpernickel bread with prawn tails

    red chilli, seeded and sliced

    butter
  • 1
    clove garlic, crushed
  • 1
    lemon, juice and rind
  • 500
    g
    prawn tails, shelled
  • 1
    bunch spring onions, finely sliced
  • lemon wedges
  • 250
    g
    pumpernickel bread slices
 

Method

 
1. Heat butter in a heavy-based pan and add the garlic, chilli and lemon juice. Once simmering add the prawns and cook until opaque. 2. Arrange cooked prawns on the bread, sprinkle with spring onions, lemon rind and serve with a wedge of lemon. Serves 6
