Ingredients (8)

1.00 red chilli — seeded and sliced
50.00 g butter
1.00 garlic — cloves, crushed
1.00 lemon — zest and juice
500.00 g prawn tails — shelled
1.00 spring onions — finely sliced
lemon — cut into wedges
250.00 g pumpernickel bread — sliced

Method:

1. Heat butter in a heavy-based pan and add the garlic, chilli and lemon juice. Once simmering add the prawns and cook until opaque.
2. Arrange cooked prawns on the bread, sprinkle with spring onions, lemon rind and serve with a wedge of lemon.
