Pulled pork tacos

Try your hand at a bit of Mexican - these pork tacos are delicious!

Ingredients

 
  • 1.5
    kg
    pork shoulder, on the bone, at room temperature, skin & fat removed
  • THE RUB:
  • 1
    Tbs
    sea salt flakes
  • 2
    tsp
    black pepper
  • 2
    tsp
    cumin
  • 2
    tsp
    oregano
  • 2
    Tbs
    olive oil
  • 2x 410
    g
    cherry tomatoes
  • 1
    cup
    vegetable stock
  • TO SERVE:
  • 250
    g
    cherry tomatoes, chopped
  • 150
    g
    feta, crumbled
  • 1
    avocado, peeled and sliced
  • 1/2
    red onion, sliced
  • 12
    taco shells, heated
  • fresh coriander and lime to serve

Method

 
Combine rub ingredients; rub all over pork. Allow to stand for 10 minutes.

Heat oil in a large, heavy-based pot, brown pork, add tomatoes and stock, cover; simmer for 2 hours, uncover, simmer 30 minutes more.

When totally cool, remove pork from pan, shred with a fork, add juices to a pot, stir through pork. Reheat gently.

To serve:
Fill taco shells with pork, add chopped tomato, feta, avocado and coriander. Serve immediately.
