Puffy flapjacks with bubbly chocolate

    (1 tbsp) baking powder

    (2 tbsp) castor sugar

    (2/5cup) soda water
  • 150
    ml
    (3/5cup) milk
  • 1
    free-range egg
  • 30
    ml
    (2 tbsp) melted butter
  • 200
    g
    white Aero chocolate, broken into pieces

Sift the flour and baking powder in a bowl. Add the sugar. Beat together the soda water, milk and egg. Mix into the dry ingredients until the mixture is smooth. Stir in the butter. Heat a non-stick pan over medium heat and drop in spoonfuls of batter. As bubbles appear on the top, flip over and cook the other side. Stack the flapjacks that are done on a plate with pieces of chocolate between them, and put them in the oven to keep warm as you cook the remaining batter.
