Psiti crema (Baked custard)

    egg yolks
  • 75
    castor sugar
  • 450
    plain Greek-style yoghurt
  • ground cinnamon
  • ground nutmeg
  • a few drops of rose water to taste


1. Beat the egg yolks and castor sugar together until creamy. Then gradually beat in the yoghurt and mix until the consistency is smooth. Add a few drops of rose water and mix in well. 2. Pour into individual ramekins or one large shallow dish and sprinkle the top generously with cinnamon and nutmeg. Stand the dishes or single dish in a roasting pan with warm water reaching halfway up the sides. 3. Bake in the oven at 180 ºC for 30 minutes or until set. Remove from the oven and stand the dishes on a wire rack to cool down. Place in the fridge to chill through. 4. Serve chilled with a dollop of honey and fresh fruit on the side.
