Prune, walnut and sesame muffins

    margarine

    castor sugar

    vanilla essence
  • 2
    eggs, beaten
  • 1
    ml
    salt
  • 120
    g
    cake flour
  • 10
    ml
    baking powder
  • 12
    prunes, diced
  • 50
    g
    walnuts or pecans
  • 30
    g
    sesame seeds, toasted
 

Method

 
Beat the margarine with the sugar and vanilla until light and creamy. Add the eggs one at a time and beat well. Add the salt and fold in the flour and baking powder. Just before baking, fold in the prunes and walnuts. Pour into greased muffin pans (or cake tins) and sprinkle with the sesame seeds. Bake at 170 ºC for 20 minutes until well-risen and light brown. Cool. Serve with lime or three-fruit marmalade. Serves 12.
