Ingredients (8)

0.50 chicken — roasted
2.00 eggs — boiled, chopped
125.00 ml mayonnaise
0.00 sea salt and freshly ground black pepper
8.00 bread — soft white, buttered
8.00 chorizo sausage — slices
8.00 prosciutto — slices
8.00 mozzarella cheese — smoked, sliced

Method:

Break the chicken into pieces and mix in the chopped egg and mayonnaise.
Season with salt and pepper.
Stuff four of the rolls with chicken-mayonnaise mixture and chorizo slices.
Fill the other four rolls with prosciutto and slices of smoked mozzarella.
Wrap the rolls in wax paper and place all the rolls on top of one another and press down with a bread board or something heavy to allow the flavours to combine.

Tip: Fill the rolls with plenty of filling the night before so there’s enough time for the flavours to be absorbed by the bread.
