Prawns with turmeric and mustard seed

Ingredients (9)

12.00 prawns — frozen
turmeric — ground, pinch
chilli powder — pinch
65.00 ml oil
3.00 ml black mustard seeds
4.00 garlic — cloves, crushed
1.00 green pepper — finely chopped
15.00 ml fresh coriander — shredded
sea salt — coarse

Method:

Shell the prawns, leaving the tail fins intact. Mix the turmeric and chilli powder and sprinkle over the prawns, mixing until the prawns are completely coated. Heat the oil in a large pan until very hot and add the mustard seeds. When the seeds begin to pop, add the garlic and fry until fragrant and tender. Stir in the chopped green pepper and fry until slightly softened. Add the prawns and stir-fry over high heat for 2-3 minutes or until just done and no longer glassy. Take care not to overcook the prawns. Remove from the heat, scatter the coriander leaves over the prawns and serve hot as a starter.
