Ingredients

  • 12
    frozen medium-sized prawns
  • pinch turmeric
  • pinch chilli powder
  • 65
    ml
    oil
  • 3
    ml
    black mustard seeds
  • 4
    cloves garlic, crushed
  • 1
    green pepper, finely chopped
  • 15
    ml
    fresh coriander leaves, shredded
  • coarse sea salt

Method

Shell the prawns, leaving the tail fins intact. Mix the turmeric and chilli powder and sprinkle over the prawns, mixing until the prawns are completely coated. Heat the oil in a large pan until very hot and add the mustard seeds. When the seeds begin to pop, add the garlic and fry until fragrant and tender. Stir in the chopped green pepper and fry until slightly softened. Add the prawns and stir-fry over high heat for 2-3 minutes or until just done and no longer glassy. Take care not to overcook the prawns. Remove from the heat, scatter the coriander leaves over the prawns and serve hot as a starter. Serves 2.
