Prawns with ginger

    large prawns

    onions, finely chopped

    sunflower oil

    pimentos, chopped

    ripe tomatoes, chopped

    bunch parsley, finely chopped
 

Method

 
Cut heads off prawns and devein, or scrape out contents of heads and add to sauce for more flavour. Brown onions and thyme in heated oil. Add crushed garlic and spices. Stir well. Add chopped pimentos and tomatoes. Cover and simmer for 10 minutes. Add prawns and stir well. Leave to brown. Pour over 500 ml (2 cups) water. Stir and cover. Cook over gentle heat for 20 to 30 minutes. Before serving, sprinkle with parsley. TOTAL KILOJOULE COUNT: 6 930 kJ (1 655 Cal). A portion: 2 310 kJ (550 Cal).
