Prawns rolled in sesame seeds

    prawns, shelled with the tails intact

    cake flour

    sesame seeds
  • SWEET 'N SOUR SAUCE
  • butter

    red pepper, seeded and chopped
  • 1
    green pepper, seeded and chopped

    onion, chopped
  • 125
    ml
    crushed pineapple
  • 65
    ml
    brown sugar
  • 65
    ml
    white vinegar
  • 150
    ml
    orange juice
  • 15
    ml
    tomato paste
  • 15
    ml
    soy sauce
 

Method

 
First make the sauce. Heat a little butter in a pan and sauté the peppers, onion and pineapple. Add the brown sugar and, stirring occasionally, heat until lightly caramelised. Add the vinegar and bring to the boil. Add the orange juice and heat until slightly reduced. Add the tomato paste and soy sauce. Simmer gently. Remove from the heat and process in a food processor. Set aside. Season the prawns and coat with the flour, shaking off the excess. Dip in the egg and then in the sesame seeds, pressing the seeds firmly onto the prawns. Refrigerate until needed. Deep-fry the prawns until golden brown and crisp, and serve with savoury rice and the sauce. Serves 4.
