Prawns rolled in sesame seeds

Ingredients (15)

24.00 prawns — shelled with tails intact
salt and freshly ground black pepper — to taste
500.00 g flour — cake
2.00 eggs — large, beaten
200.00 g sesame seeds
SWEET 'N SOUR SAUCE
butter
1.00 red pepper — deseeded and chopped
1.00 green pepper — seeded and chopped
1.00 onion — chopped
125.00 ml pineapple — crushed
65.00 ml brown sugar
65.00 ml vinegar — white
150.00 ml orange juice
15.00 ml tomato paste
15.00 ml soy sauce

Method:

First make the sauce. Heat a little butter in a pan and sauté the peppers, onion and pineapple. Add the brown sugar and, stirring occasionally, heat until lightly caramelised. Add the vinegar and bring to the boil. Add the orange juice and heat until slightly reduced. Add the tomato paste and soy sauce. Simmer gently. Remove from the heat and process in a food processor. Set aside. Season the prawns and coat with the flour, shaking off the excess. Dip in the egg and then in the sesame seeds, pressing the seeds firmly onto the prawns. Refrigerate until needed. Deep-fry the prawns until golden brown and crisp, and serve with savoury rice and the sauce.
