Prawns in lemon butter

    lemon, grated rind and juice

1. Place the prawns, heads removed and cut open, butterfly fashion, without cutting through the back shell (alimentary canal or vein must be removed), on a wire rack in a baking tray and season lightly with salt and cayenne pepper. 2. Whisk the butter and remaining ingredients and spread two thirds of this mixture over the fleshy part of the prawns. Grill under a preheated element for three minutes. Turn the prawns and grill for another minute. Turn them once again, dot with remaining butter and grill for 1 to 2 minutes.
