Prawn toasties

These prawn toasties are great served with sweet chilli sauce and a lime wedge.

Ingredients (10)

200 g prawn meat — raw
2 spring onions — finely chopped
1 Tbs cornflour
1 eggs — whites only
sea salt and white pepper
4 bread — white slices, crusts removed
20 g sesame seeds — white
oil — for deep frying
sweet chilli sauce
lime — cut into wedges

Method:

Blitz the prawn meat, spring onion, cornflour, egg white, salt and pepper in a blender for 5 seconds.

Place the bread on a surface, spread with prawn mixture, sprinkle over sesame seeds, and press down on the sesame seeds gently with the side of a knife to pack the mixture down. Cut each slice of bread into 4 triangles. Set aside.

Heat 5cm oil in a small deep pot or wok until very hot, carefully add the prawn toasts prawn side down and fry for 2 min, or until golden. Flip carefully and fry the other side. Remove, drain on paper towel and serve hot with sweet chilli sauce and lime wedges.
