Ingredients (10)

12.00 calamari — tubes
100.00 g nuts of your choice — cashews, almonds or peanuts
45.00 ml fresh chillies — 573
4.00 garlic — cloves
1.00 onion
100.00 g shrimps — (or cocktail prawns)
4.00 baby marrows
1.00 lemon — zest and juice
1.00 Italian parsley, chopped — basil, coriander
0.00 sea salt and freshly ground black pepper

Method:

Wash calamari tubes and, if necessary, remove the thin ‘plastic’ spine in the centre. Set aside.
Place the nuts in a hot, dry pan and cook until slightly browned. Remove and heat oil.
Add garlic and onion and sautT until glossy.
Add baby marrows and fry for about five minutes.
Add remaining ingredients, except nuts, and cook over medium heat for about 10 minutes.

Note: add water, a little at a time to loosen the ingredients and keep things moist, about a half cup in total. Add nuts and remove from heat.
Spoon mixture into the calamari tubes and secure with a toothpick. Don’t overstuff the tubes or they will split during cooking.
Brush tubes with a little oil and place on a baking tray.
Place under a preheated grill and cook until flesh turns white, turn and repeat process, about five minutes altogether.
Serve with jasmine or basmati rice and salad.
