Prawn curry (Prawn Olanthu)

  • 500
    g
    frozen prawns
  • 5
    ml
    turmeric
  • 2
    sprigs curry leaves
  • 30
    ml
    oil
  • 125
    ml
    coconut flakes - not dessicated coconut (optional)
  • 2
    onions, sliced into rings
  • 15
    ml
    finely grated fresh ginger
  • 15
    ml
    crushed garlic
  • 2
    tomatoes, diced
  • pinch sugar
  • 5
    ml
    chilli powder
  • salt
 

Method

 
Pour hot water over the prawns and leave until defrosted.
Drain and shell if desired.
Place the prawns in a pan and sprinkle with the turmeric.
Mix well and then add 1 sprig of curry leaves, cover and cook slowly for 5 to 10 minutes until just done (do not add any water).
Heat another pan and add the oil.
Add the coconut flakes, onions, ginger, garlic and remaining sprig curry leaves.
Sauté until the onions are translucent, then add the tomatoes, sugar and chilli powder.
Simmer until the tomatoes are tender and fragrant.
Add the prawns and season with salt if necessary.
