Ingredients (21)

1.00 onion — chopped
oil
24.00 prawns — shelled
SAUCE
410.00 g tomatoes — whole, peeled
205.00 g coconut milk
8.00 cloves
garlic — cloves, crushed
30.00 ml fresh ginger — finely grated
30.00 ml soy sauce
30.00 ml oyster sauce
2.00 green chillies — finely chopped
30.00 ml chillies — powder
5.00 ml turmeric
5.00 ml cumin — ground
5.00 ml garam masala
5.00 ml coriander — ground
15.00 ml sweet chilli sauce
30.00 ml fresh basil — chopped
30.00 ml fresh thyme — chopped
30.00 ml curry leaves — chopped
salt and freshly ground black pepper — to taste

Method:

Process all the ingredients for the sauce in a food processor until smooth. Season to taste with salt and freshly ground black pepper.
Stir-fry the onion in oil until soft and add the sauce. Simmer gently for a few minutes. Add the prawns and simmer gently for another few minutes until just done. Serve on rice with sambals.
Serves 2-3.
