    ground coriander

    sweet chilli sauce

    fresh basil, chopped

    fresh thyme, chopped

    curry leaves, chopped
  • salt and freshly ground black pepper to taste
 

Method

 
Process all the ingredients for the sauce in a food processor until smooth. Season to taste with salt and freshly ground black pepper. Stir-fry the onion in oil until soft and add the sauce. Simmer gently for a few minutes. Add the prawns and simmer gently for another few minutes until just done. Serve on rice with sambals. Serves 2-3.
